Bienvenidos al blog de las patatasbravas, en elque visitaremos los rincones de Madrid en busca deesta rica ypicante ración.Los orígenes de este plato no están claros. Unos dicen queseempezaron a servir en la desaparecida Casa Pellico de laCalleToledo. Otros dicen que fue en el famoso Las Bravas delCallejóndel Gato...lo que es seguro es que nacieron en Madrid amediadosdel siglo XX.También hay polémica con la salsa. Parece que la típicasalsamadrileña no debe llevar tomate, sino una base de caldo decocido.Incluso en zonas de Cataluña y Levante lo normal esservirlas conali-oli. Sea como sea, la salsa es la parte másimportante y lo quemás valoraremos en nuestras críticas. El únicorequisito es que seacasera. Si algo no perdonamos son unas patatascon tomate o ketchupechados directamente, porque eso ni son bravasni son ná. ¡Y quepiquen claro!No hay que olvidarse de las patatas. Ya puedes hacer lamejorsalsa del mundo, que si las patatas son congeladas o de antesdeayer, no hay por donde cogerlas. Lo habitual en Madrid esfreirlashasta que queden blandas y dejar enfriar. Luego, justoantes deservirlas, meterlas en aceite fuerte para que se dorenligeramente.En cuanto al tamaño y forma, las clásicas son dadosgrandes eirregulares, pero eso ya depende del bar.Además de salsa y patatas, también es importante el precio ylacantidad de la ración.
